- Pat the tofu dry, cut into 1-inch cubes, and toss with cornstarch until lightly coated.
- Heat oil in a nonstick skillet over medium-high heat and fry the tofu for 3–4 minutes per side until golden and crisp.
- Whisk soy sauce, maple syrup, sesame oil, rice vinegar, garlic, and ginger in a bowl, then simmer in the empty skillet for 2 minutes until thickened.
- Return the tofu to the pan, toss gently to coat, and serve right away over rice with sesame seeds and green onions.
Notes
If the tofu cubes are larger than an inch, give them an extra minute or two per side so the middle heats through. The sauce can double easily if you like your bowls extra saucy.
