Sesame Peanut Soba Noodle Salad Recipe

Ingredients
  

  • 8 oz soba noodles
  • 3 tbsp soy sauce
  • 2 tbsp toasted sesame oil
  • 2 tbsp rice vinegar
  • 1/4 cup creamy peanut butter
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced
  • 2 medium carrots, shredded
  • 1 red bell pepper, sliced into matchsticks
  • 1 small cucumber, halved, deseeded, thinly sliced
  • 1 cup shelled edamame, thawed
  • 3 scallions, sliced
  • 1/4 cup chopped fresh cilantro
  • Optional: toasted sesame seeds, crushed peanuts, red pepper flakes

Method
 

  1. Cook soba noodles in boiling salted water for 4-5 minutes, then drain and rinse under cold water.
  2. Whisk all dressing ingredients until smooth, adding a little warm water if it gets too thick.
  3. Slice and shred the vegetables while the noodles cook.
  4. Toss everything together with the dressing and serve at room temperature or chilled, garnished with scallions, cilantro, and sesame seeds.

Notes

If you like a looser salad, reserve about a third of the dressing and stir it in just before serving. The edamame requires no cooking if it is already shelled and thawed, but a quick 30-second blanch in the noodle water gives it a brighter green color.
