Sesame Meatball Rice Bowls Recipe

Ingredients
  

  • 1 lb frozen meatballs, any variety
  • 2 tbsp vegetable oil
  • ΒΌ cup soy sauce
  • 3 tbsp honey
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp cold water
  • 4 cups cooked white rice, warm
  • 2 scallions, thinly sliced
  • 1 tbsp toasted sesame seeds

Method
 

  1. Whisk together the soy sauce, honey, rice vinegar, garlic, ginger, and the cornstarch slurry in a small bowl.
  2. Heat the oil in a large skillet over medium-high. Add the frozen meatballs in a single layer, pour the sauce over them, and toss to coat. Simmer for 10 to 12 minutes, turning occasionally, until the meatballs are hot and the sauce is glossy and thick.
  3. Drizzle in the sesame oil, toss again, then spoon the rice into bowls. Top with the meatballs and extra sauce, and finish with scallions and sesame seeds.

Notes

If the glaze gets too thick while simmering, stir in a tablespoon of water at a time to loosen it. The meatballs reheat well, but always add a splash of water to the skillet so the sauce does not burn.
