Self-Saucing Chocolate Pudding Recipe

Ingredients
  

  • 1 cup self-raising flour
  • 3/4 cup granulated sugar
  • 1/4 cup plus 2 tbsp cocoa powder, divided
  • Pinch salt
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 3/4 cup brown sugar
  • 1 3/4 cups boiling water

Method
 

  1. Heat oven to 350°F (180°C). In a bowl, whisk together flour, granulated sugar, 2 tbsp cocoa powder, and salt.
  2. Stir in milk, melted butter, and vanilla until a thick, smooth batter forms.
  3. Combine brown sugar and remaining 1/4 cup cocoa powder, then sprinkle evenly over the batter. Slowly pour boiling water over the back of a spoon onto the pudding.
  4. Bake for 35-40 minutes until the top is set and sauce is bubbling at the edges. Cool 5 minutes.
  5. Spoon into bowls, scooping all the way to the sauce, and serve hot.

Notes

The pudding looks watery when it goes into the oven, but the sauce thickens as it bakes. For the richest sauce, use dark brown sugar and full-fat milk.
