Seared Marinated Beef Tenderloin with Garlic and Rosemary Recipe

Ingredients
  

  • 1 1/2 lb center-cut beef tenderloin
  • 1/4 cup extra-virgin olive oil
  • 3 garlic cloves, minced
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp balsamic vinegar
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp avocado oil

Method
 

  1. Whisk the olive oil, garlic, rosemary, balsamic vinegar, salt, and pepper in a small bowl.
  2. Pat the tenderloin dry, then rub the marinade all over the meat. Let it sit at room temperature for 30 minutes, or cover and refrigerate up to 4 hours.
  3. Heat the avocado oil in a cast-iron skillet over high heat until just smoking. Sear the tenderloin for 2 minutes on each of four sides, about 8 minutes total.
  4. Rest the beef on a cutting board for 10 minutes, then slice and serve with the collected juices.

Notes

If you marinate in the fridge, let the beef come to room temperature for 30 minutes before searing so it cooks evenly. Use a thermometer to nail your preferred doneness, and don’t rush the resting time.
