Ingredients
Method
- Coat the tuna in sesame seeds and black pepper. Heat oil over high heat, sear the tuna 1 to 2 minutes per side until a golden crust forms, then rest 5 minutes. Slice thinly against the grain.
- Preheat oven to 375°F. Cut wonton wrappers into triangles, spread on a sheet, spray with oil, and bake 5 to 7 minutes until golden and crisp.
- Mix mayonnaise, sriracha, and lime juice for the spicy mayo. In another bowl, whisk soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger until glossy.
- Arrange chips on a platter, fan the sliced tuna over them, and drizzle half the sauces on top.
- Add avocado, green onions, and jalapeño. Finish with remaining sauces, toasted sesame seeds, pickled ginger, and serve with lime wedges.
Notes
Let the seared tuna rest for 5 minutes before slicing to keep the juices inside. If you can’t find sashimi-grade ahi, ask your fishmonger for tuna safe to eat rare. Assemble the nachos at the last minute so the chips stay crisp.
