Savory Zucchini Bread Recipe

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • ½ tsp garlic powder (optional)
  • 2 large eggs
  • ⅓ cup olive oil
  • ½ cup plain whole-milk yogurt
  • 1½ cups shredded zucchini, squeezed dry
  • 1 cup shredded sharp cheddar cheese
  • ⅓ cup thinly sliced scallions
  • 2 tbsp chopped fresh chives
  • 2 tbsp chopped fresh parsley

Method
 

  1. Whisk flour, baking powder, baking soda, salt, pepper, and garlic powder in a large bowl.
  2. In a separate bowl, beat eggs, then whisk in oil and yogurt until smooth.
  3. Pour the wet mixture into the dry and stir until just combined. Fold in the squeezed zucchini, cheddar, scallions, chives, and parsley.
  4. Scrape batter into a greased and parchment-lined 9x5-inch loaf pan. Bake at 350°F for 55 to 65 minutes until a toothpick inserted in the center comes out with moist crumbs.
  5. Cool in the pan for 10 minutes, then lift out and cool another 20 minutes before slicing.

Notes

Squeezing the zucchini is not optional here; any extra liquid will weigh the bread down. If you want to prep ahead, shred and squeeze the zucchini the night before and keep it in the fridge. This loaf tastes even better the next day.
