- Combine the oats, buttermilk, salt, pepper, and garlic powder in a jar. Stir well, cover, and refrigerate at least 4 hours.
- In the morning, stir in the cheddar and chives until the cheese is evenly mixed and just starting to soften.
- Spoon into a bowl, top with a soft-boiled egg, halved tomatoes, a drizzle of olive oil, and extra chives if you like. Serve immediately.
Notes
The soaked oat base keeps in the fridge for up to 3 days. If you are making multiple servings, scale the batch and add the cheese and fresh toppings just before serving. For a warm bowl, microwave for 1 to 2 minutes before topping.
