- Warm a large nonstick skillet over medium heat. In a shallow dish, whisk eggs, milk, Parmesan, chives, parsley, garlic powder, salt, and pepper.
- Dip each bread slice into the custard, pressing gently, and soak 30 seconds per side. Let excess drip off.
- Melt 1 tbsp butter in the skillet. Fry 2 slices for 3 to 4 minutes per side until deeply golden and crisp. Repeat with remaining butter and slices.
- Plate two slices per person, top with bacon, sliced avocado, cherry tomatoes, and extra chives. Pass sour cream and hot sauce at the table.
Notes
The bacon can be cooked in the skillet before you start the toast, then set aside. If your bread is very fresh and soft, let it sit out for 20 minutes so it dries slightly and absorbs the custard without tearing.
