- Heat oven to 375°F (190°C). Brown the onion, garlic, and ground beef in olive oil until cooked through, about 6 to 8 minutes. Stir in paprika, thyme, salt, and pepper.
- In a greased 9x13 inch dish, layer one third of the cabbage, half the beef mixture, half the rice, and half the tomatoes and sauce. Repeat with another third cabbage, remaining beef, rice, tomatoes, and sauce, then top with the last third of cabbage. Pour broth over the top.
- Cover tightly with foil and bake 45 minutes, until cabbage is tender and bubbling.
- Remove foil, sprinkle with cheese, and bake uncovered 10 minutes more until golden. Let rest 10 minutes before serving.
Notes
Letting the casserole rest after baking really helps the layers set up, so slices stay intact when you lift them out. If you love a deeper tomato flavor, stir a spoonful of tomato paste into the sauce before layering.
