- Pound the chicken to an even ½-inch thickness and season both sides with salt and pepper.
- Heat the oil in a large skillet over medium-high heat. Sear the chicken for 5 to 6 minutes per side until golden and cooked through (165°F). Transfer to a plate and tent with foil.
- Lower the heat to medium. Melt the butter and cook the garlic for 30 seconds. Stir in the lemon juice, scraping up any browned bits.
- Slice the chicken against the grain, plate, and spoon the pan sauce over the top. Garnish with parsley and serve immediately.
Notes
If your chicken breasts are very thick, slice them horizontally into cutlets instead of pounding. The pan sauce can also be finished with a small handful of grated Parmesan for extra depth.
