Ingredients
  

  • 1 lb breakfast sausage
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • ½ tsp kosher salt
  • ¾ tsp black pepper
  • 1 can (16.3 oz) refrigerated flaky biscuits (8 count)
  • 1 tsp chopped fresh sage or ½ tsp dried (optional)

Method
 

  1. Preheat oven to 350°F. Brown sausage over medium-high heat until no pink remains, about 6 minutes.
  2. Reduce heat to medium-low; add butter, then flour, stir 1 minute. Slowly pour in milk, salt, and pepper, and cook until thickened, 3 to 4 minutes.
  3. Transfer gravy to a greased 9×13-inch dish if needed. Cut biscuits into quarters and scatter evenly over the gravy, pressing lightly.
  4. Bake until biscuits are golden and gravy bubbles, about 30 minutes. Rest 5 minutes, then slice and serve.

Notes

Let the casserole sit for 5 minutes after baking so the squares hold together when you cut them. If you like a stronger black pepper flavor, sprinkle a little extra on top before serving.
