Ingredients
Method
- Heat oil in a large skillet over medium-high. Add sausage slices in a single layer and cook 4 minutes without moving, then flip and cook 2-3 minutes more. Transfer to a plate.
- Add bell peppers, onion, and zucchini to the same skillet with a pinch of salt. Cook 6-8 minutes, stirring occasionally, until softened and charred at the edges.
- Reduce heat to medium-low, add garlic, smoked paprika, and red pepper flakes, and stir 30 seconds. Pour in broth, scrape the pan bottom, and simmer 1 minute. Stir in vinegar.
- Return sausage to the skillet with any juices, toss to coat, and warm through 1 minute. Season to taste and serve with parsley.
Notes
If your smoked sausage releases very little fat while browning, add a touch more oil before cooking the vegetables. The apple cider vinegar really makes the flavors pop, so taste and add a tiny splash more if it still feels flat.
