Sausage and Cheese Overnight Breakfast Casserole Recipe

Ingredients
  

  • 1 lb bulk pork breakfast sausage
  • 1 loaf (1 lb) day-old French or Italian bread, cut into 1-inch cubes
  • 8 oz sharp cheddar cheese, shredded
  • 10 large eggs
  • 3 cups whole milk
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 1 tbsp unsalted butter, for greasing the dish
  • 2 tbsp sliced green onions, for serving (optional)

Method
 

  1. Brown the sausage in a skillet over medium-high heat until cooked through, about 8 minutes. Drain and set aside.
  2. Butter a 9x13-inch baking dish. Layer half the bread, sausage, and cheese. Repeat with remaining bread, sausage, and cheese.
  3. Whisk eggs, milk, salt, pepper, and garlic powder. Pour evenly over the casserole. Press bread gently into liquid. Cover and refrigerate at least 8 hours.
  4. Preheat oven to 350°F (175°C). Remove plastic wrap and let dish sit at room temperature 20 minutes. Bake uncovered 45–50 minutes until puffed and golden.
  5. Rest 5 minutes, then slice into squares and serve. Garnish with green onions if desired.

Notes

If your bread is very fresh, dry the cubes in a 300°F oven for 10 minutes before assembling. The casserole needs the refrigerator time, so plan for at least 8 hours of soaking.
