- Brown sausage in a skillet over medium-high heat until cooked, 6 to 8 minutes. Drain and cool slightly.
- Whisk eggs, milk, dry mustard, salt, and pepper in a large bowl until smooth and slightly frothy.
- Grease a 9x13 baking dish. Layer half the bread, half the sausage, and half the cheese. Repeat with remaining bread, sausage, and cheese. Pour egg mixture evenly over the top, press down gently, cover, and refrigerate at least 4 hours or overnight.
- Preheat oven to 350°F (175°C). Uncover dish and bake 45 to 55 minutes, until puffed and golden and a knife inserted in center comes out clean.
- Let rest 10 minutes, then slice and serve hot with green onions if desired.
Notes
If you're short on time, you can skip the overnight soak, but aim for at least 30 minutes so the bread starts to soften. The 10-minute rest after baking is important for clean slices.
