Sausage and Cabbage Skillet Recipe

Ingredients
  

  • 12 oz smoked sausage
  • 1 tbsp olive oil or butter
  • 1 small yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 medium head green cabbage, thinly sliced (about 1 lb)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp apple cider vinegar (optional)
  • 2 tbsp water or chicken broth
  • Fresh parsley, chopped, for serving (optional)

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Slice sausage into 1/4-inch rounds and sear for about 5 minutes, turning once or twice, until well browned on both sides.
  2. Move sausage to one side, add onion to the open space, and cook for 2-3 minutes until translucent. Stir in garlic and cook 30 seconds more, mixing everything together.
  3. Add cabbage, salt, pepper, and water. Toss, cover, and cook over medium heat for 8-10 minutes, tossing once, until cabbage is tender with a slight bite. Uncover, stir in vinegar, and adjust salt.
  4. Spoon onto plates, scatter parsley on top, and serve hot.

Notes

Leftovers keep well in the fridge for up to 3 days. The vinegar is optional, but a small hit of acid really balances the rich sausage. Reheat in a skillet with a splash of water to revive the texture.
