Ingredients
  

  • 1 can (4 oz) good-quality sardines in olive oil
  • 2 thick slices sourdough or rustic bread
  • ⅓ cup cherry tomatoes, halved
  • ½ lemon, juiced
  • Small handful flat-leaf parsley, chopped
  • 1 small garlic clove, cut in half (optional)
  • Flaky salt and cracked black pepper
  • Pinch red pepper flakes (optional)

Method
 

  1. Smash the halved tomatoes in a bowl with lemon juice, salt, and pepper, then stir in most of the parsley.
  2. Toast the bread until deep golden, then rub with the cut garlic clove if using. Place on a plate rubbed side up.
  3. Arrange the sardines on the toast, spoon the tomato mixture over the top, and finish with the remaining parsley and red pepper flakes. Serve right away.

Notes

Eat this as soon as it’s assembled, the toast will soften if it sits too long. For a little extra heat, drizzle a few drops of chili crisp over the top just before serving.
