Ingredients
Method
- Mix the crust dough: whisk flour, sugar, salt; cut in butter until pea-sized bits remain; stir in ice water until dough holds together; divide, shape into disks, chill 30 minutes.
- Caramelize the sugar: melt sugar over medium heat until deep amber; stir in butter; remove from heat, whisk in cream and salt; cool.
- Sauté the apple filling: combine apples, lemon juice, brown sugar, cornstarch, cinnamon, nutmeg, and salt; cook 8-10 minutes until thickened; cool.
- Assemble the pie: roll one disk to 12 inches, line pie plate; add cooled filling, drizzle half the caramel; top with second crust, crimp, vent, egg wash, and sugar.
- Bake until golden: 400°F for 20 minutes, then 375°F for 35-45 minutes, until bubbling and deep golden.
- Cool and slice: cool at least 2 hours; slice, drizzle with remaining caramel and flaky salt.
Notes
Allowing the pie to rest for a full 2 hours is key for neat slices. The caramel will continue to set as it cools, so don’t rush it. If your kitchen is warm, chill the assembled pie before baking for a flakier bottom crust.
