Salmon With Mashed Potatoes Recipe

Ingredients
  

  • 1 ½ lbs (680 g) skin-on salmon fillets
  • 2 lbs russet potatoes
  • 4 tbsp unsalted butter
  • ½ cup whole milk
  • 1 lemon
  • 1 clove garlic
  • 2 tbsp fresh parsley
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper

Method
 

  1. Peel and cube potatoes, cover with cold salted water, boil until very tender, then drain.
  2. Pat salmon dry and season. Sear skin-side down in hot oil for 4 minutes without moving, press lightly at the start. Flip and cook 3 minutes more to 125°F.
  3. Mash hot potatoes with 3 tbsp butter and warm milk until smooth. Season with salt.
  4. In the same skillet over medium heat, melt 1 tbsp butter, cook garlic 30 seconds, add lemon juice and parsley, scraping the pan.
  5. Plate mashed potatoes, top with salmon skin-side up, and spoon the sauce over everything.

Notes

Potato cooking time can vary, so start checking a couple minutes early. For the crispiest skin, do not move the salmon for those first 4 minutes. The sauce is meant to be thin and glossy, not thick.
