- Peel and cube potatoes, cover with cold salted water, boil until very tender, then drain.
- Pat salmon dry and season. Sear skin-side down in hot oil for 4 minutes without moving, press lightly at the start. Flip and cook 3 minutes more to 125°F.
- Mash hot potatoes with 3 tbsp butter and warm milk until smooth. Season with salt.
- In the same skillet over medium heat, melt 1 tbsp butter, cook garlic 30 seconds, add lemon juice and parsley, scraping the pan.
- Plate mashed potatoes, top with salmon skin-side up, and spoon the sauce over everything.
Notes
Potato cooking time can vary, so start checking a couple minutes early. For the crispiest skin, do not move the salmon for those first 4 minutes. The sauce is meant to be thin and glossy, not thick.
