- In a bowl, combine mango, bell pepper, red onion, jalapeño, cilantro, and lime juice. Season with a pinch of salt and set aside.
- Pat salmon dry, then season both sides with salt and pepper. Let sit 5 minutes.
- Heat oil in a skillet over medium-high. Add salmon skin-side down and cook 4 minutes, until golden. Flip and cook 2–3 minutes more until just opaque in the center.
- Plate salmon, spoon salsa over the top, and serve immediately.
Notes
This recipe works best with fillets about 1 inch thick. If yours are thinner, reduce the cooking time by a minute per side. For extra tang, add lime zest to the salsa.
