Ingredients
  

  • 2 skin-on salmon fillets (6 oz each)
  • 2 tbsp olive or avocado oil
  • Salt and freshly ground black pepper
  • 1 large ripe mango, peeled and diced
  • ½ red bell pepper, diced
  • ¼ cup finely diced red onion
  • 1 small jalapeño, seeded and minced
  • ¼ cup chopped fresh cilantro
  • 2 tbsp fresh lime juice

Method
 

  1. In a bowl, combine mango, bell pepper, red onion, jalapeño, cilantro, and lime juice. Season with a pinch of salt and set aside.
  2. Pat salmon dry, then season both sides with salt and pepper. Let sit 5 minutes.
  3. Heat oil in a skillet over medium-high. Add salmon skin-side down and cook 4 minutes, until golden. Flip and cook 2–3 minutes more until just opaque in the center.
  4. Plate salmon, spoon salsa over the top, and serve immediately.

Notes

This recipe works best with fillets about 1 inch thick. If yours are thinner, reduce the cooking time by a minute per side. For extra tang, add lime zest to the salsa.
