Salmon Sushi Bowl Recipe

Ingredients
  

  • 1 cup sushi rice
  • 8 oz sushi-grade salmon
  • 2 tbsp unseasoned rice vinegar
  • 1 tbsp sugar
  • ½ tsp sea salt
  • 1 ripe avocado
  • ½ English cucumber
  • 1 sheet nori
  • 2 tbsp mayonnaise
  • 1 tsp sriracha
  • ½ tsp toasted sesame oil
  • Sesame seeds and sliced scallions

Method
 

  1. Rinse and cook sushi rice. Mix rice vinegar, sugar, and salt; fold into hot rice, then let cool to room temperature.
  2. Slice salmon against the grain into ¼-inch pieces. Slice avocado and cucumber, tear nori.
  3. Stir mayo, sriracha, and sesame oil until smooth and pale orange.
  4. Divide rice into bowls, top with salmon, avocado, cucumber, and nori. Drizzle spicy mayo, add sesame seeds and scallions, and serve right away.

Notes

Spread the seasoned rice on a baking sheet to speed up cooling if you are short on time. Only use sushi-grade salmon, and keep it refrigerated until the moment you slice it. The spicy mayo can be made the day before and stored in the fridge.
