Salmon Rice Paper Rolls Recipe

Ingredients
  

  • 8 round rice paper wrappers (22cm / 8.5 inch)
  • 8 oz smoked salmon
  • 1 small cucumber, sliced into thin matchsticks
  • 1 medium carrot, peeled and julienned
  • A handful of fresh mint and cilantro leaves
  • 4 leaves of butter lettuce, torn into pieces
  • 3 tbsp soy sauce
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 1 tsp toasted sesame oil
  • 1 tsp sriracha or chili flakes (optional)

Method
 

  1. Whisk the soy sauce, lime juice, honey, sesame oil, and sriracha in a small bowl. Set aside for 5 minutes.
  2. Dip each rice paper wrapper in warm water for 10 to 15 seconds until pliable, then lay on a damp kitchen towel.
  3. Place a piece of lettuce, salmon, cucumber, carrot, and herbs on the lower third of the wrapper, roll tightly, and fold in the sides. Serve immediately with the dipping sauce.

Notes

The dipping sauce can be made a day ahead and kept in the fridge. To prevent the rolls from drying out, cover them with a damp towel as you assemble and store any leftovers the same way.
