Salmon Pasta Salad Recipe

Ingredients
  

  • 8 oz short pasta (rotini, penne, or shells)
  • 2 (6-oz) cans skinless boneless salmon, drained
  • 2 ribs celery, diced
  • ½ cup diced red bell pepper
  • 2 tbsp finely chopped red onion
  • 1 tbsp drained capers
  • ½ cup mayonnaise
  • 2 tbsp sour cream or plain yogurt
  • Zest and juice of 1 lemon (about 2 tbsp juice)
  • 1 tsp Dijon mustard
  • ¼ tsp salt
  • Freshly ground black pepper
  • ¼ cup chopped fresh dill, plus extra for serving

Method
 

  1. Boil pasta in salted water until al dente, about 8 to 10 minutes. Drain, rinse with cold water, and cool completely.
  2. In a large bowl, whisk mayonnaise, sour cream, lemon zest, lemon juice, Dijon, salt, and pepper until smooth.
  3. Add pasta, salmon, celery, bell pepper, onion, and capers. Fold gently until evenly coated.
  4. Toss with fresh dill, then serve or chill 20 minutes. Finish with extra pepper and lemon wedges.

Notes

If you use leftover cooked salmon, flake it into the salad after the dressing and pasta are combined. The salad can be made a day ahead. The flavors deepen overnight, so it’s a great option for meal prep. Stir it well before serving and add a fresh squeeze of lemon to bring back its brightness.
