- Whisk the soy sauce, rice vinegar, honey, sesame oil, ginger, and garlic until the honey dissolves, about 30 seconds.
- Slice cucumber into 1/8-inch rounds, shred carrot, slice avocado, and separate and dry the butter lettuce leaves.
- Pat salmon dry, season with salt, and sear in oil over medium-high heat for 3-4 minutes per side, then rest for 2 minutes.
- Flake salmon into chunks and fill each lettuce cup with about 2 tablespoons of fish, then top with vegetables and cilantro.
- Drizzle the sauce over the wraps and serve immediately with sesame seeds if you like.
Notes
These wraps are best eaten right away, but all the components can be prepped a day ahead and stored separately in the fridge. If your salmon is thicker than 1 inch, add an extra minute or two per side.
