Salmon Foil Packets Recipe

Ingredients
  

  • 4 (6-oz) salmon fillets, skin removed
  • 1 lb asparagus, ends trimmed
  • 1 cup cherry tomatoes, halved
  • 4 tbsp unsalted butter, cubed
  • 2 cloves garlic, minced
  • 1 lemon, half sliced into rounds and half reserved for juice
  • 2 tbsp olive oil
  • 2 tsp chopped fresh dill, plus more for serving
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Method
 

  1. Heat oven to 400°F. Toss asparagus and cherry tomatoes with olive oil, half the garlic, ¼ tsp salt, and a pinch of pepper. Divide vegetables among four 12-inch foil squares, piling in the center.
  2. Pat salmon dry and place one fillet on top of each pile. Dot with butter, then sprinkle remaining garlic, ¼ tsp salt, and 2 tsp dill over the fish. Add a couple of lemon slices to each packet.
  3. Fold foil over salmon, crimp edges to seal, and place packets on a baking sheet. Bake 15 to 18 minutes, until salmon flakes easily.
  4. Let packets rest 1 minute, then carefully open. Squeeze reserved lemon juice over the fish and top with fresh dill. Serve warm in the foil.

Notes

The steam inside the packets is very hot, so open them away from your face. If you are using foil that isn’t labeled heavy-duty, double up each square to prevent tears.
