Salmon Avocado Salad Recipe

Ingredients
  

  • 2 salmon fillets, about 5 oz each
  • 1 tbsp olive oil
  • Salt and black pepper
  • 1 large ripe avocado
  • 4 cups mixed salad greens
  • 1 small cucumber
  • 1 cup cherry tomatoes
  • ¼ small red onion
  • ¼ cup plain Greek yogurt
  • 2 tbsp fresh lemon juice
  • 1 tbsp chopped fresh dill
  • 1 tsp Dijon mustard
  • 2 tbsp olive oil
  • 1 tbsp water
  • A pinch of salt and a few grinds of pepper

Method
 

  1. Whisk yogurt, lemon juice, dill, mustard, olive oil, water, salt, and pepper in a bowl until smooth. Set aside.
  2. Preheat a pan over medium-high heat. Pat salmon dry, season with salt and pepper, and sear in oil for 3 to 4 minutes per side until golden and cooked to 125°F. Rest on a plate.
  3. Scatter greens on plates. Top with sliced cucumber, halved tomatoes, and thin onion slices.
  4. Fan avocado slices over the greens, place warm salmon on top, break into chunks, drizzle with dressing, and serve immediately.

Notes

Pat the salmon completely dry right before it hits the pan to get that nice sear. If the avocado is on the firmer side, slice it earlier and let it sit out while you cook, which softens it just enough without turning mealy.
