Sago Gulaman Drink with Tapioca Pearls and Coconut Recipe

Ingredients
  

  • 1 cup sago (tapioca pearls)
  • 2 bars (12 g each) unflavored gulaman (agar-agar)
  • 1 cup sugar
  • 6 cups water
  • 1 can (13.5 oz) coconut milk
  • 1 tsp vanilla extract
  • 1 ripe banana (optional)

Method
 

  1. Boil 4 cups of water, add sago, simmer 15–20 mins until translucent, drain and rinse.
  2. Combine 2 cups water, ½ cup sugar, and gulaman in a saucepan, boil 3 mins until dissolved, pour into a dish, let set, then cut into cubes.
  3. Dissolve remaining ½ cup sugar in 2 cups water over low heat, cool, then whisk in coconut milk and vanilla.
  4. Fill glasses with ice, add sago, gulaman, and banana, pour syrup, stir, and serve with spoons.

Notes

The drink needs about an hour of chilling for the gulaman to set and the syrup to cool completely, so plan ahead. I find the sago has the best bouncy chew the same day it’s cooked.
