- In a light-colored skillet over medium heat, melt the butter and cook, swirling often, until the milk solids turn golden brown and smell nutty, about 4 to 5 minutes.
- Add the sage leaves and chopped walnuts, reduce heat to low, and cook 60 to 90 seconds until the sage is crisp and the walnuts are toasted.
- Remove from heat, stir in nutmeg, salt, and pepper, then spoon immediately over hot pumpkin ravioli.
Notes
The sauce hardens as it cools, so have the ravioli drained and waiting. If you cannot find fresh sage, simply make the brown butter with walnuts and nutmeg; it is still a beautiful sauce.
