- Brown the ground beef, onion, and garlic in a large skillet over medium heat for 6 to 8 minutes, then drain excess grease.
- Stir in the Rotel tomatoes and chili powder and simmer for 3 minutes over medium-low heat.
- Lower the heat and melt in the Velveeta cubes a handful at a time, stirring for 5 to 6 minutes until smooth, then season with salt and pepper.
- Spoon into a serving bowl and serve hot with tortilla chips.
Notes
This dip is best eaten within the first hour, since it thickens noticeably as it cools. If you're making it ahead for a party, keep it warm in a slow cooker on low rather than reheating it repeatedly, which can make the cheese grainy over time.
