Roasted Garlic Mashed Potatoes Recipe

Ingredients
  

  • 3 lbs Yukon Gold potatoes
  • 1 head garlic
  • 2 tbsp olive oil
  • ½ cup unsalted butter
  • ½ cup whole milk
  • 1 tsp salt, plus more for water
  • ¼ tsp black pepper
  • Chopped fresh chives (optional)

Method
 

  1. Heat oven to 400°F. Slice the top off the garlic, drizzle with olive oil, wrap in foil, and roast for 40 minutes until soft.
  2. Peel and cut potatoes into 1-inch chunks. Cover with cold salted water, bring to a boil, then simmer until fork-tender, 15-18 minutes. Drain and return to pot to steam dry.
  3. In a small saucepan, warm butter and milk over low heat until butter melts.
  4. Rice potatoes back into the pot. Squeeze in roasted garlic cloves, then fold in warm milk mixture. Season with salt and pepper.
  5. Transfer to a serving bowl, create a swoop, drizzle with extra melted butter, and top with chives.

Notes

A hand masher works well too, just avoid a food processor or the starches will turn gummy. The mash stays warm in a slow cooker on low for up to 2 hours.
