- Heat oven to 425°F (220°C). Pat chicken dry and rub with olive oil. Combine garlic powder, paprika, salt, and pepper, then season all sides of each breast.
- Place chicken skin side up on a baking sheet. Roast 25–30 minutes, until skin is golden and the thickest part reads 160°F (71°C).
- Transfer to a board, tent with foil, and rest 5–10 minutes. Temperature will rise to 165°F (74°C).
- Slice against the grain and spoon any pan juices on top. Serve hot.
Notes
Choose breasts that are similar in weight so they finish at the same time. If only large pieces are available, add a few extra minutes and check the temperature early. Letting the meat rest is not optional; it makes the difference between dry chicken and slices that drip when you cut into them.
