Method
- Preheat oven to 425°F (220°C). Pat turkey dry, loosen skin, rub 3 tbsp butter under the skin and 1 tbsp on top, then season with salt, pepper, and garlic powder. Tuck herbs under the skin if using.
- Place breast skin-side up on a rack in a roasting pan. Roast at 425°F for 20 minutes, until skin starts to puff and turn pale gold.
- Lower oven to 350°F (175°C) without opening the door. Roast 40 to 60 minutes more, until a thermometer reads 160°F (71°C) in the thickest part.
- Rest the breast on the rack for 15 minutes, then carve against the grain and serve.
Notes
If your turkey breast is much thicker on one end, you can even out the roast by tying it with kitchen twine or folding a thin piece of foil over the smaller end during the last 20 minutes of cooking. The breast needs the full 15 minutes of resting time, so do not rush that step.
