- Season the beef with the olive oil, garlic, rosemary, thyme, salt, and pepper, then sear it in a hot skillet on all sides, about 12 minutes total, until deeply browned.
- Roast the skillet in a 425°F (220°C) oven for 25 to 30 minutes, until the beef reaches 130°F (54°C) for medium-rare.
- Rest the beef, loosely covered, for 10 minutes, then slice it thin against the grain.
- Whisk the mayonnaise, horseradish, and lemon juice together until smooth.
- Broil the split rolls with the provolone until melted and golden, then spread with the horseradish mayo and layer with the sliced beef, arugula, and red onion.
Notes
The roast needs 10 minutes to rest before slicing, and that time isn't counted in the prep or cook minutes above. If you're roasting the beef a day ahead, chill it whole and slice it cold, then let the slices warm up slightly at room temperature before building the sandwiches.
