Rice Paper Noodles Recipe

Ingredients
  

  • 8 rice paper sheets
  • 2 tbsp soy sauce
  • 1 tbsp fresh lime juice
  • 1 tsp granulated sugar
  • 2 tsp chili oil
  • 1 tsp toasted sesame oil
  • 1 small carrot
  • ½ cucumber
  • 2 tbsp roasted peanuts
  • Small handful fresh cilantro and mint leaves

Method
 

  1. Stack the rice paper and cut into 1 cm wide strips using kitchen shears or a sharp knife.
  2. In a large bowl, whisk together the soy sauce, lime juice, sugar, chili oil, and sesame oil until the sugar dissolves.
  3. In a separate bowl of warm water, soak the rice paper strips in batches for 30 to 60 seconds, until soft and translucent, then drain well and transfer to the dressing bowl.
  4. Add the julienned carrot, cucumber matchsticks, and most of the herbs. Toss gently until everything is coated.
  5. Divide between bowls, top with chopped peanuts and the remaining herbs, and serve right away.

Notes

Rice paper strips can clump if left sitting in a pile. Transfer them to the dressing immediately after draining and separate them with your fingers. The noodles are best eaten within an hour of assembling.
