Ingredients

  • 4 oz rice vermicelli noodles
  • 8 oz shrimp, peeled and deveined
  • 1 tbsp neutral oil
  • 1 medium carrot, julienned
  • ½ English cucumber, thinly sliced
  • Small handful fresh mint leaves
  • Small handful fresh cilantro leaves
  • 3 tbsp lime juice
  • 2 tbsp fish sauce
  • 1 tbsp granulated sugar
  • 1 garlic clove, minced
  • 1 small red chili, thinly sliced (optional)
  • 2 tbsp chopped roasted peanuts
  • Salt, for the shrimp

Method

  1. Bring a pot of water to a boil. Cook the rice noodles according to package directions, about 3 minutes, until tender. Drain and rinse under cold water, then set aside.
  2. While the noodles cook, season the shrimp with a pinch of salt. Heat the oil in a skillet over medium-high heat. Add the shrimp and sear 2 to 3 minutes per side until pink and curled. Remove to a plate.
  3. In a small bowl, whisk together the lime juice, fish sauce, sugar, garlic, and chili (if using) until the sugar dissolves.
  4. In a large bowl, combine the drained noodles, carrot, cucumber, mint, cilantro, and shrimp. Pour most of the dressing over and toss well. Divide between plates, top with peanuts, and drizzle any remaining dressing on top. Serve right away.

Notes

If you want to prep ahead, cook the noodles and shrimp, chop the vegetables, and make the dressing, then store everything separately. Toss just before eating so the noodles stay springy and the vegetables keep their crunch.
