- Whisk the flour, cocoa, baking soda, and salt in a bowl.
- Beat butter and sugar 3 minutes until fluffy. Mix in eggs, vanilla, food coloring, buttermilk, and vinegar.
- On low, add dry ingredients in three parts, mixing just until combined. Fold in chopped strawberries.
- Preheat oven to 350°F (175°C). Grease two 9-inch pans, line with parchment, divide batter evenly, and bake 27-30 minutes until a toothpick comes out clean. Cool 10 minutes, then invert and cool completely.
- Beat cream cheese and butter until smooth. Beat in powdered sugar, strawberry puree, and vanilla, then whip 2 minutes on medium high until pink and fluffy.
- Place one layer flat side up on a plate, spread 1 cup frosting, add the second layer flat side down, and frost top and sides. Decorate with fresh strawberries.
Notes
This cake tastes even better the next day after the flavors settle. If the frosting thickens too much in the fridge, let it sit on the counter for 10 minutes and give it a quick stir. For the cleanest slices, chill the frosted cake for 30 minutes before cutting.
