- In a 12-ounce microwave-safe mug, whisk together flour, sugar, cocoa, baking powder, and salt.
- Add buttermilk, oil, vanilla, and food coloring; stir until smooth, scraping the bottom.
- Microwave on high for 60 seconds, then check and add 15-second bursts until the top is set but slightly shiny (about 90 seconds total). Let rest 1 minute.
- Stir together cream cheese, powdered sugar, and the extra vanilla; dollop onto the warm cake.
Notes
The cream cheese frosting is optional but adds that classic tang. If you skip it, a quick powdered sugar glaze (2 tbsp powdered sugar plus a few drops of milk) works nicely on the warm cake. This cake is best eaten right away while it’s still warm.
