Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 to 2 tbsp liquid red food coloring
  • 1 3/4 cups all-purpose flour
  • 2 tbsp unsweetened natural cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 cup white chocolate chips
  • 1/2 cup powdered sugar

Method

  1. Beat the butter, granulated sugar, and brown sugar until fluffy, about 2 minutes. Add the egg, vanilla, and 1 tbsp food coloring. Beat until combined, adding more coloring for a vivid red.
  2. Whisk the flour, cocoa, baking powder, baking soda, and salt together. Add to the wet mixture and mix just until no dry streaks remain. Fold in the white chocolate chips.
  3. Cover and chill the dough for at least 30 minutes. Meanwhile, preheat the oven to 350°F (175°C) and line two baking sheets with parchment.
  4. Scoop chilled dough by rounded tablespoons and roll into balls. Roll each ball generously in powdered sugar and place 2 inches apart on the sheets.
  5. Bake for 10 to 12 minutes, until the edges are set and the tops are deeply crackled.
  6. Cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely. Serve once cool.

Notes

Chilling time is not included in the prep total. For the deepest crinkle, chill the dough a full hour before shaping. If you are short on time, 30 minutes works, but the cookies may spread a touch more.
