- Beat the butter, granulated sugar, and brown sugar until fluffy, about 2 minutes. Add the egg, vanilla, and 1 tbsp food coloring. Beat until combined, adding more coloring for a vivid red.
- Whisk the flour, cocoa, baking powder, baking soda, and salt together. Add to the wet mixture and mix just until no dry streaks remain. Fold in the white chocolate chips.
- Cover and chill the dough for at least 30 minutes. Meanwhile, preheat the oven to 350°F (175°C) and line two baking sheets with parchment.
- Scoop chilled dough by rounded tablespoons and roll into balls. Roll each ball generously in powdered sugar and place 2 inches apart on the sheets.
- Bake for 10 to 12 minutes, until the edges are set and the tops are deeply crackled.
- Cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely. Serve once cool.
Notes
Chilling time is not included in the prep total. For the deepest crinkle, chill the dough a full hour before shaping. If you are short on time, 30 minutes works, but the cookies may spread a touch more.
