Ingredients
  

  • 1 ½ cups all-purpose flour
  • 2 tbsp unsweetened cocoa powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, melted
  • ¾ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp liquid red food coloring or ½ tsp gel
  • 1 cup white chocolate chips

Method
 

  1. Whisk flour, cocoa powder, baking soda, and salt in a medium bowl.
  2. In a large bowl, whisk melted butter, brown sugar, and granulated sugar until smooth. Whisk in egg, vanilla, and food coloring until bright and uniform.
  3. Stir dry ingredients into wet mixture until just combined. Fold in white chocolate chips. Cover and refrigerate at least 30 minutes.
  4. Preheat oven to 350°F (175°C). Scoop rounded tablespoons of dough onto parchment-lined baking sheets, spacing 2 inches apart. Bake 10–12 minutes, until edges are set and centers look slightly underdone.
  5. Cool on the baking sheet for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

Chilling the dough for at least 30 minutes is key for thick, chewy cookies that don’t spread too thin. If you like a more pronounced tang, add ½ teaspoon white vinegar along with the egg.
