- Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment. Whisk together 1 cup sugar, flour, cocoa, baking powder, and salt. Stir in melted butter, 2 eggs, 1 1/2 tsp vanilla, food coloring, and vinegar until smooth.
- Beat cream cheese with 1/4 cup sugar, egg yolk, and 1/2 tsp vanilla until completely smooth and glossy.
- Spread most of the brownie batter in the pan, dollop the cheesecake mixture over it, then dot with the remaining brownie batter.
- Swirl gently with a knife in a figure-eight motion, 4 to 6 passes. Bake 25 to 30 minutes until the top is set and a toothpick comes out with moist crumbs.
- Cool completely in the pan on a wire rack, chill 30 minutes if you like clean cuts, then lift out and slice into squares.
Notes
For the brightest red, stick with gel food coloring. Chilling the brownies before slicing gives you razor-sharp edges and makes the swirls pop.
