Red Cabbage Salad Recipe

Ingredients
  

  • 1 small head red cabbage (about 1½ lbs), shredded finely
  • 2 medium carrots, peeled and grated
  • 1 small red onion, thinly sliced
  • 1 green apple, cored and cut into matchsticks
  • 3 tbsp apple cider vinegar
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • ½ tsp caraway seeds (optional)
  • Kosher salt and black pepper, to taste
  • A handful of fresh parsley, roughly chopped

Method
 

  1. Shred the cabbage, grate the carrots, slice the onion, and cut the apple into matchsticks. Toss everything together in a large bowl.
  2. In a small bowl or jar, whisk the apple cider vinegar, olive oil, honey, Dijon mustard, caraway seeds if using, and a generous pinch of salt and pepper until the dressing looks creamy.
  3. Pour about two-thirds of the dressing over the cabbage mixture and toss well. Let the salad sit for 5 minutes, then add the parsley and the remaining dressing if needed. Toss again and serve.

Notes

This salad softens as it sits, so if you like a really firm crunch, dress it right before eating. Leftovers will release liquid in the fridge; just drain the excess and give it a fresh toss before serving again.
