Raspberry Coconut Cake Recipe

Ingredients
  

  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup (150g) granulated sugar
  • ½ cup (120ml) vegetable oil
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • ½ cup (120ml) canned full-fat coconut milk
  • 1 cup (100g) sweetened shredded coconut
  • 1 ½ cups (170g) fresh or frozen raspberries (do not thaw)
  • 1 tbsp all-purpose flour, for dusting raspberries

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment paper. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  2. In a large bowl, whisk sugar, oil, eggs, vanilla, and coconut milk until smooth.
  3. Pour dry into wet and stir with a spatula until just a few streaks remain. Toss raspberries with the 1 tbsp flour, then fold the coated raspberries and shredded coconut into the batter.
  4. Scrape batter into the pan and bake for 55-65 minutes, until a toothpick comes out clean. Cool in the pan 10 minutes, then lift out to a wire rack.
  5. Once completely cool, top with toasted coconut and a dusting of powdered sugar, then slice and serve.

Notes

For the best texture, use full-fat coconut milk and room-temperature eggs. If the top browns too fast, tent with foil after 40 minutes. Start checking at 55 minutes; oven times can vary.
