- Boil potatoes in salted water for 12 to 15 minutes until fork-tender, then drain and spread on a baking sheet to cool for 10 minutes.
- Whisk together mayo, sour cream, and ranch packet until smooth. Thin with 2 tbsp milk and season to taste.
- Fold cooled potatoes, celery, and red onion into the dressing until evenly coated, adding a splash more milk if needed.
- Spoon into a serving dish, top with fresh dill or chives, and serve immediately or chill at least 1 hour for deeper flavor.
Notes
If you do not have a ranch packet, use 2 tbsp of your favorite homemade ranch seasoning blend. The salad tastes best after at least an hour in the fridge to let the herbs bloom, but you can absolutely eat it right away.
