Method
- Bring a medium pot of water to a rolling boil. Gently lower in 4 cold eggs, then boil for exactly 6 minutes and 30 seconds.
- Transfer the eggs to a bowl of ice water and let them sit for 3 minutes. Peel under cool running water.
- In a small container, whisk together the soy sauce, mirin, sake, water, and sugar until the sugar dissolves. Add the eggs and place a paper towel on top to submerge them. Cover and refrigerate at least 4 hours.
- Slice the eggs in half lengthwise and serve on hot ramen.
Notes
The total time does not include the 4-hour (or overnight) marinating period. The longer the eggs soak, the deeper the color and the saltier they become. For the jammy center shown, use eggs straight from the fridge and shock them immediately.
