Ingredients

  • 1 cup dry quinoa
  • 2 cups water
  • 4 oz block feta cheese, crumbled
  • 1 English cucumber, diced
  • 2 cups cherry tomatoes, halved
  • 1 red bell pepper, diced
  • ½ small red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1 small garlic clove, minced
  • ¼ tsp fine sea salt
  • Freshly ground black pepper, to taste

Method

  1. Rinse quinoa and combine with water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer 12 to 15 minutes until tender and water is absorbed. Remove from heat, let stand covered 5 minutes, then fluff and spread on a baking sheet to cool completely.
  2. In a small bowl, whisk olive oil, lemon juice, oregano, garlic, salt, and pepper. Set aside 10 minutes.
  3. Soak red onion in cold water 5 minutes, drain. Dice cucumber and bell pepper, halve tomatoes, chop herbs. Combine vegetables and herbs in a large bowl.
  4. Add cooled quinoa and half the feta to the bowl. Pour dressing over and toss gently to coat. Taste and adjust salt or lemon, then top with remaining feta and serve.

Notes

For the brightest flavor, let the salad rest in the fridge for 30 minutes before serving. The dressing soaks into the quinoa and the herbs get a chance to bloom, but it is still delicious right away.
