- Heat the 1 tbsp olive oil in a large skillet over medium-high heat. Add the turkey and taco seasoning and cook, breaking up the meat with a spoon, until browned and cooked through, about 8 minutes.
- In a small bowl, whisk together the 1/4 cup olive oil, lime juice, cumin, garlic, salt, pepper, and cilantro until emulsified.
- Divide the lettuce among four bowls. Top with the warm turkey, black beans, corn, tomatoes, avocado, and cheese.
- Drizzle each bowl with about 2 tablespoons of the dressing, then crush the chips over the top. Serve right away.
Notes
If you want a creamier dressing, whisk 2 tablespoons of Greek yogurt or sour cream into the vinaigrette before adding the cilantro. For make-ahead meals, store the turkey, lettuce, and dressing separately and assemble just before serving.
