Quick Weeknight Ground Turkey Taco Salad Recipe

Ingredients
  

  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 packet low-sodium taco seasoning (about 2 tbsp)
  • 4 cups shredded romaine or mixed greens
  • 1 cup canned black beans, rinsed and drained
  • 1 cup fresh or frozen corn kernels, thawed
  • 1 cup cherry tomatoes, halved
  • 1 large avocado, diced
  • 1/2 cup shredded Mexican blend cheese
  • 1 cup crushed tortilla chips
  • 1/4 cup extra-virgin olive oil
  • 3 tbsp fresh lime juice
  • 1 tsp ground cumin
  • 1 small garlic clove, finely minced
  • 1/4 tsp fine sea salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh cilantro

Method
 

  1. Heat the 1 tbsp olive oil in a large skillet over medium-high heat. Add the turkey and taco seasoning and cook, breaking up the meat with a spoon, until browned and cooked through, about 8 minutes.
  2. In a small bowl, whisk together the 1/4 cup olive oil, lime juice, cumin, garlic, salt, pepper, and cilantro until emulsified.
  3. Divide the lettuce among four bowls. Top with the warm turkey, black beans, corn, tomatoes, avocado, and cheese.
  4. Drizzle each bowl with about 2 tablespoons of the dressing, then crush the chips over the top. Serve right away.

Notes

If you want a creamier dressing, whisk 2 tablespoons of Greek yogurt or sour cream into the vinaigrette before adding the cilantro. For make-ahead meals, store the turkey, lettuce, and dressing separately and assemble just before serving.
