Quick Tofu Pad Thai Recipe

Ingredients
  

  • 8 oz dried flat rice noodles
  • 14 oz block extra-firm tofu, pressed and cubed
  • 3 tbsp vegetable oil
  • 2 large eggs
  • 1 cup bean sprouts
  • 3 green onions, thinly sliced
  • 1/4 cup crushed roasted peanuts
  • Lime wedges and fresh cilantro leaves, for serving
  • 3 tbsp tamarind concentrate
  • 2 tbsp fish sauce (or soy sauce)
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1 tsp sriracha (optional)

Method
 

  1. Press the tofu for 15 minutes, cut into cubes, and fry in 2 tbsp oil over medium-high heat until golden on all sides, about 8 to 10 minutes. Remove from the pan.
  2. Add the remaining 1 tbsp oil to the wok, pour in the beaten eggs, and scramble until just set. Push the eggs to the side.
  3. Soak the rice noodles until pliable, then drain. Add them to the wok with the whisked sauce mixture and toss for 2 to 3 minutes until coated. Add the tofu, bean sprouts, and half the green onions, then toss 30 seconds more.
  4. Serve immediately topped with peanuts, the remaining green onions, cilantro, and a big squeeze of lime.

Notes

If you don’t have a wok, a large nonstick skillet works just as well. The sauce can be mixed and refrigerated a day ahead.
