Ingredients
  

  • 2 large flour tortillas (10-inch)
  • 5 oz fresh baby spinach
  • 4 oz feta cheese, crumbled
  • 1 clove garlic, minced
  • 1 tbsp olive oil, plus more for toasting
  • 1 tsp lemon juice
  • Pinch of salt and black pepper
  • 2 tbsp chopped sun-dried tomatoes or kalamata olives (optional)

Method
 

  1. Set a large skillet over medium heat with 1 tbsp olive oil. Cook the garlic for 30 seconds, then add all the spinach and stir until wilted and most liquid evaporates, about 2 to 3 minutes.
  2. Transfer the spinach to a bowl, let cool slightly, then mix in the crumbled feta, lemon juice, salt, pepper, and sun-dried tomatoes or olives if using.
  3. Lay the tortillas out, spoon the filling onto the lower third of each, fold the sides in, and roll up tightly.
  4. Wipe the skillet, set it back over medium heat, and toast the wraps seam-side down for 2 to 3 minutes per side until golden and crisp. Slice and serve warm.

Notes

If you are planning to eat these later, skip the toasting step until just before serving. The wraps can sit wrapped in the fridge overnight without getting soggy as long as the spinach was well-drained.
