Quick Spicy Vegetable Soup Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 1 small zucchini, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1/2 tsp red pepper flakes
  • Salt and black pepper, to taste
  • Plain yogurt and fresh parsley or cilantro, for serving

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion and a pinch of salt, and cook for 5 minutes until softened. Stir in garlic and cook for 30 seconds.
  2. Add carrots, celery, and bell pepper. Cook for 3 to 4 minutes. Pour in diced tomatoes and vegetable broth, plus red pepper flakes and black pepper. Bring to a boil, then reduce to a simmer.
  3. Simmer uncovered for 15 minutes, stirring occasionally. Add zucchini during the last 5 minutes. Taste and adjust salt and red pepper flakes.
  4. Ladle into bowls, top with yogurt and fresh herbs, and serve hot.

Notes

The soup will thicken slightly as it sits, so thin it with a little extra broth or water when reheating. For a milder version, use half the red pepper flakes and taste before adding more.
