- Whisk olive oil, lime juice, garlic, chili powder, cayenne, smoked paprika, cumin, brown sugar, and salt in a bowl. Add chicken, coat well, and let sit at room temperature for 20 minutes.
- Preheat grill to medium-high (400°F). Oil grates, then grill thighs 5 to 7 minutes per side until charred and the internal temperature reaches 165°F.
- Rest chicken on a board for 5 minutes, slice against the grain, and finish with lime juice and cilantro.
Notes
The 20-minute room-temperature rest counts as marinating time and is not included in the prep. For deeper flavor, you can refrigerate the chicken in the marinade for up to 2 hours before grilling. If using breasts, pound them to an even thickness so they cook at the same rate as the thighs.
